DEC. 7, 2022 – INDIO, CA –  Let the award-winning team of chefs led by Executive Chef Freddy Rieger at Fantasy Springs Resort Casino take care of your Christmas brunch, lunch and dinner. Chef Freddy’s team has created menus featuring delicious options for Christmas Eve and Christmas Day, Dec. 24 and 25. In addition to special holiday meals, regular menus will also be offered at The Bistro and POM

Christmas Eve

Dine on a gourmet seafood mix at The Bistro featuring crab-stuffed Maine lobster, colossal Australian prawn and Cape Cod diver scallops paired with truffle risotto, cauliflower-cheddar soufflé, drawn Plugra butter with a lemon-garlic sauce. $70 per person. 5 p.m. – 10 p.m. Reservations recommended.

At POM start off with soup of the day then enjoy braised boneless beef short ribs, garlic whipped potatoes, sautéed baby rainbow carrots with a red currant demi-glace. $38 per person. 5 – 11 p.m. Reservations are recommended.

Come hungry to Fresh Grill Buffet for a variety of soups and salads such as pork pozole, cream of wild mushroom soup, Thai beef salad, grilled shrimp and chicken Caesar salad. Chilled seafood options include oysters on the half shell, poached New Zealand mussels and Scottish smoked salmon. Carving board includes roast prime rib and maple roasted turkey breast.

Chef Specialties feature crisp roasted pork belly, slow-roasted leg of lamb with mint jelly demi-glace, seafood scampi, barbecued St. Luis pork ribs plus an array of Italian, Asian and Latin offerings. Dessert choices include Fantasy Springs’ famous chocolate fountain, cakes, pastries, bananas foster, warm bread pudding and sugar free offerings, and much more. 4 p.m. – 9 p.m. $44.99, adults; $34.99, kids 3-11 years.

Christmas Day

Feast on classic Steak Diane at The Bistro featuring a 16 oz. center cut new York sirloin, garlic-braised fondant potato, haricots verts, exotic mushroom Dijon demi-glace. 5 p.m.– 10 p.m. $50 per person. Reservations are recommended.

POM offers Amish chicken corn chowder followed by Beef Wellington featuring filet mignon, spinach-mushroom duxelles wrapped in flaky puff pastry, sautéed asparagus and a port wine demi-glace.  Dinner is served from 5 p.m.– 11 p.m. $46 per person.

The Fresh Grill Buffet begins with a brunch served from 10 a.m. – 3:30 p.m., then dinner is served from 3:30 – 9 p.m.

Brunch features made-to-order omelets, eggs Benedict, smoked bacon, country sausage, warm biscuits and gravy, griddle favorites, blueberry-cheese blintzes and New York bagels, cream cheese and smoked salmon.

Soups and salad include Puebla style menudo and New England clam chowder, Korean shrimp noodle salad, baby spinach with feta cheese, prosciutto, grilled pineapple and dates. Chilled seafood choices feature Norwegian smoked salmon and gulf shrimp cocktail. The carving station offers roast prime rib, honey-Dijon baked Virginia ham and maple glazed turkey breast.
