DEC 16, 2025 – INDIO, CA – This Christmas Eve and Christmas Day, enjoy a festive holiday dining experience at Fantasy Springs Resort Casino. Bistro, POM, and Fresh Grill Buffet will offer special Christmas menus on Wednesday, Dec. 24, and Thursday, Dec. 25, 2025, created by the award-winning culinary team led by Executive Chef Freddy Rieger. Guests can look forward to a delicious selection of seasonal favorites perfect for celebrating the holidays.
At Bistro, on Christmas Eve, guests can indulge in Lobster Pasta Carbonara, featuring ½ Caribbean lobster tail, Maine lobster meat, fettuccine pasta, peas, guanciale, Pecorino Romano cream sauce, salt-cured egg yolk, and garlic crostini ($54).
Then, on Christmas Day, savor a Bourbon-Honey Glazed Alaskan Halibut paired with rock shrimp risotto, grilled vegetables, and roast-garlic lemon butter sauce. ($44). 5 p.m. – 10 p.m. Reservations are recommended.
On Christmas Eve at POM, enjoy Seafood Linguini Alla Vodka with sautéed lobster, shrimp, scallops, linguini, vodka rosé sauce, and Asiago toast ($38).
Miso-Soy Glazed Chilean Sea bass is the star of the show on Christmas Day, served with braised Yukon gold potatoes, Blue Lake beans Amandine, finished in a lemon-herb butter sauce. ($42). Noon – 11 p.m. Reservations are recommended.
At the Fresh Grill Buffet, celebrate Christmas Day with an exceptional holiday dining experience, featuring festive brunch and dinner selections. Guests will enjoy made-to-order breakfast favorites, including omelets, waffles, and classic eggs Benedict, alongside fresh salads, seasonal soups, and an elegant chilled seafood display with crab legs, shrimp cocktail, smoked salmon, and oysters.
From the carving board, savor prime rib, honey-glazed ham, and maple-roasted turkey, complemented by chef-driven specialties such as grilled New York strip steaks, roasted lamb, baked salmon, and comforting holiday sides.
