MAY 1, 2025 – INDIO, CA –Treat the special mother in your life to a lovely dining experience at Fantasy Springs Resort Casino on Sunday, May 11, 2025. The award-winning culinary team led by Executive Chef Freddy Rieger have crafted special menus at Bistro, POM and Fresh Grill Buffet.

Enjoy a scrumptious brunch at Fresh Grill Buffet from 10 a.m. – 3:30 p.m. or dinner from 3:30 p.m. – 9 p.m. Brunch options include made-to-order omelets, eggs Benedict, chicken fried steak, country gravy, griddle favorites including apple pancakes, cheese blintzes, and traditional sides.
There will also be a variety of fresh salads, imported Italian meats and cheeses, chicken noodle soup and pork pozole. A bounty of chilled seafood on ice includes Alaskan snow crab legs, oysters-on-the-half-shell, Gulf shrimp cocktail and New Zealand mussels.
The carving board features savory roast prime rib, maple-roasted turkey breast, and honey-glazed Virginia ham. Chef’s specialties include grilled-to-order ‘Churrasco style’ New York steaks, blackened fillet of salmon, bacon-wrapped pork medallions with Manchego cheese sauce, Chinese pork belly stir fry, and an array of Italian, Asian and Latin options.
