December 6, 2018 - INDIO, CA – This Christmas Day, the acclaimed chefs at Fantasy Springs Resort Casino will prepare a memorable feast for guests of every age to enjoy. Three of the resort’s seven restaurants will offer dining specials on Tuesday, December 25th so make plans to celebrate the holiday with friends and family at the resort’s Fresh Grill Buffet, POM or at The Bistro.
The Bistro will celebrate Christmas with a delicious entrée of citrus glazed Chilean sea bass and lobster-stuffed giant prawn. A fennel braised potato pedestal, butter poached vegetable bouquet and a garlic-thyme beurre blanc with a saffron béarnaise sauce accompany this dish for $42. The Bistro opens for dinner at 5pm and will also be offering its regular menu.
There will also be a Christmas day special in POM of char-grilled Australian lamb chops and prosciutto-wrapped jumbo shrimp. Accompanying this dish is garlic mashed potatoes, sautéed asparagus, rosemary-mint demi glace and garlic-citrus butter sauce for $34.  POM’s Christmas hours are from 6am until 11pm and the restaurant’s regular menu will also be available.
At the Fresh Grill Buffet, get the holiday started with a Christmas Eve Dinner from 4pm until 9pm.  Delicious soups and salads can start each guest’s meal before they move on to delicious seafood selections like gulf shrimp cocktail and poached Canadian mussels.  Entrees include roast prime rib of beef and maple roasted turkey breast. A full array of desserts will be available. The Fresh Grill Buffet’s Christmas Eve Dinner is $24.99 for adults and $12.00 for children.
On Christmas Day, Fresh Grill Buffet guests can enjoy Christmas Brunch from 10am until 3:30pm with a vast selection of breakfast specialties including omelets made to order, smoked bacon, country sausage, apple pancakes, and almond French toast along with the rest of the vast Fresh Grill Buffet Christmas offerings. Christmas Dinner, which will be served all day, will include an array of soups and salads including grilled chicken and shrimp Caesar salad, jumbo shrimp cocktail, Amish chicken corn chowder and seafood jambalaya. Guests can also enjoy succulent meats from the carving station including roast prime rib of beef, honey-Dijon baked Virginia ham and maple-glazed turkey breast. Fresh Grill Buffet will also include delectable choices like Alaskan snow crab legs, Norwegian smoked salmon and poached Canadian mussels. There will be a variety of Chef’s specialties including grilled to order New York strip steaks, baked filet of salmon Florentine with Piccata sauce, garlic-rosemary grilled bone-in pork chops, white cheddar cauliflower au grain, corn bread stuffing with maple-roasted sausage, and candied sweet potatoes. Guests will need to save some room for a trip to the extensive dessert bar. There, diners will enjoy Fantasy Springs’ Famous Chocolate Fountain surrounded by a huge selection of cakes and pastries, warm bread pudding, yule logs, bananas Foster, and, of course, Christmas cookies! The dessert bar will also feature many delicious sugar-free confections.
With large, open seating arrangements, the Fresh Grill Buffet is the perfect place for groups and families, as well as for smaller parties for the Christmas holiday or for any holiday. Fresh Grill Buffet is open from 10am to 3:30pm for brunch on Christmas day and from 3:30pm to 9pm for Christmas Dinner. The cost is $32.99 for adults and $16.99 for children.

November 1, 2018 - INDIO, CA – The weather has gotten cooler and the holidays are fast approaching. Fantasy Springs Resort Casino’s acclaimed chefs, led by Executive Chef Freddy Rieger, have assembled a beautiful menu to serve your entire family this Thanksgiving. On Thursday, November 22nd Fresh Grill Buffet, POM and The Bistro will create the perfect atmosphere to celebrate the holiday and give thanks with friends and family.

Autumn favorites are combined with Thanksgiving staples from around the world at the Fresh Grill Buffet, which is open from 11am to 9pm on Thanksgiving. Adults are $31.99 and children ages 3 to 11 are $16.99. Children under 3 are free. The all-you-can-eat buffet begins with the soup and salad bar, where Chef Freddy has prepared classic light fare of grilled shrimp and chicken Caesar salad, Autumn mixed greens with local dates, walnuts and strawberries, and North Coast shrimp and orecchiette pasta salad. These will be matched with palate teasers such as butternut squash bisque and Italian wedding soup. Hearty entrees will include chilled seafood on ice and carving board favorites like maple roasted turkey breast, slow roasted prime rib au jus and honey-mustard glazed Virginia ham. The Chef’s Specialties will feature baked Atlantic salmon with tomato-caper relish, seafood scampi, bacon-wrapped stuffed pork tenderloin with chorizo, corn and Oaxaca cheese and cornbread stuffing with maple roasted sausage. Ending on a sweet note, diners can indulge in the Fantasy Springs Signature Chocolate Fountain, pumpkin pie, warm raisin bread pudding and much more.

The Bistro takes a more traditional approach to Thanksgiving, providing families with favorites that are sure to remind them of home. The a-la-carte menu includes an arugula and baby kale salad with sunflower butter dressing or toasted almond butternut squash bisque for $8.00, a lovely main course of fresh roasted Tom turkey, cheddar whipped potatoes and gravy, country-style cornbread stuffing with maple roasted sausage, asparagus with lavender hollandaise and cranberry sauce for $28.00. A warm French baguette and whipped butter are served with every meal. And for dessert, a deliciously comforting pumpkin spice cheesecake with fresh whipped cream and cinnamon anglaise is available for $10.00. The Bistro serves Thanksgiving dinner from 3pm-10pm. The Bistro’s regular menu will also be available. For $26.00, diners can feast on a main course of fresh roasted Tom turkey, cornbread stuffing with maple roasted sausage, candied sweet potatoes, buttered broccoli amandine, cranberry sauce and warm dinner rolls with whipped butter.  Homemade pumpkin pie with cinnamon whipped cream complete the meal for $7.00. November 5, 2018 - INDIO, CA – The Cabazon XXXVII Indio Powwow comes to the Cabazon Indian Reservation and Fantasy Springs Resort Casino on Thanksgiving weekend, November 23rd through the 25th. With the resort’s Special Events Center as its setting, the powwow brings together thousands of tribal and non-tribal people for a grand celebration of culture and customs.
Historically, Native American tribes have assembled annually to trade, socialize and honor feats of bravery and achievement. Fall gatherings celebrated the successful harvest and brought people together to feast, dance, sing and take part in sacred ceremonies. The 37th Indio Powwow features tribes from across the United States and Canada who attend in elaborate regalia to show their skill in dance and singing competitions.
Visitors to the Cabazon XXXVII Indio Powwow will have an opportunity to taste Native American foods such as Indian fry bread and shop among vendors for jewelry, weavings and other Native American art. Powwow highlights include the Bird Singers and the Grand Entry, when all the dancers form a procession that winds around the arena.
The Indio Powwow is a rich part of the Cabazon Band of Mission Indians’ heritage and they welcome everyone in the Coachella Valley and beyond to share in this special yearly tradition. Admission is FREE.
The powwow is open on Friday, November 23rd from 5pm to midnight. Bird Singing is scheduled for 5pm and Grand Entry will take place at 8pm. On Saturday, festivities start at 11am with Grand Entry scheduled for 1pm and again at 8pm, with Bird Singing at 5pm. On Sunday the powwow gets underway at 11am with the Grand Entry at 12 noon.

October 1, 2018 – INDIO, CA – At a benefit jazz concert inside TWELVE: Cocktails Above at Fantasy Springs Resort Casino on Sunday, The Cabazon Band of Mission Indians presented a $35,000 gift to FIND Food Bank in celebration of the regional food bank’s 35 years of service to the community.

The Cabazon Band of Mission Indians was represented by Tribal Vice Chairwoman San Juanita Callaway, Tribal Secretary-Treasurer Helen Callaway and Member at Large Brenda Soulliere, who presented the $35,000 gift to Debbie Espinosa, CEO and President of FIND Food Bank. FIND Food Bank Board Member Clark Hallren introduced a challenge at Sunday’s benefit concert, where he announced he and his husband Ken Wilson would generously match all donations given by guests gathered at the event, up to $5,000. That challenge was happily met.

For 35 years FIND Food Bank’s mission has been to fight food insecurity and hunger by providing much-needed food resources. FIND has evolved from a small fellowship of like-minded individuals into the Greater Coachella Valley’s Regional Food Bank, providing not only healthy, nutritious food assistance but also outreach services to help low-income households build sustainability and self-sufficiency. Every dollar given to FIND Food Bank goes to serve seven meals to those who are food-insecure in the Coachella Valley, so every donation, no matter how small, helps the community.

Also on hand to entertain the invited guests with jazz standards for the afternoon was The Brian Nova Trio featuring FIND Food Bank board member Paul MacKey. Paul is the host of Jazz at Twelve, held every fourth Sunday at Fantasy Springs.


The Cabazon Band of Mission Indians is a federally recognized Indian tribe with approximately 1,610 acres of reservation land in the Coachella Valley. September 27, 2018 – INDIO, CA – In what is being called a “sweet” victory for Fantasy Springs Resort Casino, the Rocky Mountain Chocolate Factory location inside Fantasy Springs has been named the 2017 Rookie Of The Year shop by Rocky Mountain Chocolate Factory’s bi-annual convention, held this week in Nashville, TN.

Rocky Mountain Chocolate Factory gives its Rookie of the Year award to the new store that shows the most dedication to customer satisfaction and to the Rocky Mountain Chocolate Factory brand. The Fantasy Springs location of Rocky Mountain Chocolate Factory is honored to have received this year’s award. “All the long hours, hard work and passion for what we do clearly paid off and I’m so proud off our team,” said Fantasy Springs Director of Food & Beverage Tony Sanza.

The Rocky Mountain Chocolate Factory at Fantasy Springs Resort Casino opened in November of 2017 and is situated between Starbucks and The Bistro on the upper level near the hotel. After its grand opening, it quickly became the Coachella Valley’s favorite destination for the finest in culinary delights. Besides carrying over 30 varieties of their world famous caramel and chocolate-covered apples, fudge is made daily at the shop for all guests to see. The cooks use a marble slab to cool the chocolate delicacy while shaping it with paddles into giant 22-pound loaves. A variety of fruits, pretzels and cookies are also dipped by hand into pots of melted milk, dark and even white chocolate to create a cornucopia of unforgettable and tantalizing treats.

The first Rocky Mountain Chocolate Factory store opened on Memorial Day of 1981 in the quaint old mining town of Durango, Colorado. In order to fill those positions, the property is holding a job fair at the resort’s Special Events Center on Wednesday, June 6th from 1pm until 7pm.

Applicants attending the Fantasy Springs job fair will find employment opportunities in all departments, from housekeeping to food and beverage to casino operations.  Managers from all departments will be on hand to immediately interview applicants, and prospective applicants are encouraged to dress for success.

April 24, 2018 – INDIO, CA - It is with deep sadness and a heavy heart that The Cabazon Band of Mission Indians must announce the passing of their Elder and former Chairman John A. James. Chairman James passed away peacefully among family and friends on Saturday, April 21, 2018. Chairman James was one of the most recognized and respected Native American leaders throughout the United States and has been called The Father of Native American Gaming, but to the Cabazon Band he was simply “Chairman.”

Current Chairman Doug Welmas stated, “Chairman James set the bar for all tribal leaders.  His passing is not only a loss for Cabazon, but for all tribal nations. Chairman’s service to his country, to his people and to his family is a legacy that we all hope to emulate and to continue to live up to.”

Chairman John Alexander James was born in 1931 and spent the early years of his life in the Los Angeles area. He was a Korean War Army veteran serving as a member of the “Wolfhounds” 27th Infantry Regiment, 25th Infantry Division. He received two Bronze Stars and was recognized by President Nixon as an Honorary Navajo Code Talker.

Chairman James was employed by the telephone company for more than 25 years and showed leadership from an early age. He became Secretary/Treasurer of The Cabazon Band of Mission Indians in 1977 and as he got more involved with tribal government, he recognized the need for Tribal self-sufficiency. He saw the establishment of high-stakes bingo and poker as a means of achieving that goal. He was instrumental in guiding the Tribe as it made its way through the court system, leading to the landmark 1987 Cabazon Decision in the U.S. Supreme Court, affirming the inherent right of the Cabazon Band of Mission Indians and other sovereign Tribes across the country to set the course for their own futures and consequently, creating the Indian gaming industry in the United States.

John James was elected into office as Chairman of the Cabazon Band of Mission Indians in 1989 and served in that position for more than 20 years. The Cabazon Band acknowledges him as a leader who persevered through many challenges and was often victorious, all while fighting for the rights of his people.

A recipient of many honors, Chairman James was awarded with the National Indian Gaming Association’s John Kieffer Sovereignty Award, recognizing his work toward the protection of Indian sovereign rights. In 2008, he was awarded the Pathbreakers Award by the Indian Gaming Regulatory Act Conference, recognizing his efforts to restore tribal self-sufficiency and respect for tribal sovereignty. He was also honored with a plaque in 2016 at Veterans Memorial Park in Coachella, CA.

The following prayer, spoken by Chief Dan George of the Tsleil-Waututh Nation, meant a great deal to Chairman James:

O Great Spirit whose voice I hear in the winds,
I come to you as one of your children.
I need your strength and your wisdom.
Make me strong not to be superior to my brothers and sisters,
but to be able to fight my greatest enemy, myself.

Having been the premiere place to see live jazz in the Coachella Valley for over a year, this month’s “Jazz At The 12th Floor Lounge” features multi-talented vocalist Billy Valentine, performing in a luxurious and newly redesigned space featuring sweeping views of the entire Coachella Valley. Billy began his professional career as a solo artist opening for such luminaries as Donny Hathaway and Roberta Flack in the 1970s. He also was the lead singer for the group Young-Holt Unlimited. Billy says he’s most profoundly influenced by the soulful talents of Otis Redding, Nat King Cole and Carmen MacRae.

Each afternoon of jazz is hosted by award winning singer and performing artist Paul MacKey and is presented by drummer Andy Fraga and bassist Larry Holloway.

Doors to “Jazz At The 12th Floor Lounge” open at 1pm on the fourth Sunday of each month and live entertainment is featured from 2pm until 5pm. The 12th Floor Lounge features a beautiful new wine list and a selection of the best artisan cheeses, produced primarily by hand in small batches.  No reservations are necessary and Jazz At The 12th Floor Lounge events are always free.

March 1, 2018 – INDIO, CA – The luck of the Irish will be with you when you make Fantasy Springs Resort Casino your place to celebrate St. Patrick’s Day.  Our chefs have been busy preparing the menus for some delicious Irish dining specials at two of the resort’s seven restaurants on Thursday, March 17th.

For an elegant yet casual St. Patrick’s Day dining experience, try POM at Fantasy Springs.  The chefs’ offerings will include a mouth-watering Honey-Mustard Glazed Corned Beef and Bacon Braised Cabbage dish, featuring O’Brien potatoes, grilled asparagus, Irish soda bread pudding, and apple butter for just $25.  You can also treat yourself to a delectable starter of Irish chicken Colcannon soup.  A bowl is $7.50 and a cup is $5.00.  POM’s nightly menu will also be available with dinner seating starting at 5pm.

Come to the Fresh Grill Buffet at Fantasy Springs for a special St. Patrick’s Day lunch or dinner and celebrate the Emerald Isle by enjoying delightful Irish fare.  While guests may start at any of the interactive food stations at the all-you-can-eat buffet, many begin with the extensive soup and salad bar.  This will include a special Irish pub salad, a Belfast-style potato salad, Irish cole slaw, Irish chicken Colcannon soup, and a signature split pea and ham soup. The carving board will feature succulent honey-mustard glazed corned beef and fresh roasted turkey breast, while seafood lovers will find poached Canadian mussels and shrimp cocktail on the dinner menu. The Irish fare doesn’t stop there because the Chef Freddy’s specialties will feature Guinness and brown sugar glazed pork chops, roasted leg of lamb with Irish whiskey sauce, braised cabbage with bacon and herbs, and beef brisket pot roast.  An impressive array of Italian, Asian, and Latin specialties will also be made available.  The pot of gold at the end of the rainbow will be Fantasy Springs’ famous chocolate fountain, which will be surrounded by a huge selection of exquisite cakes, pastries, warm bread pudding and bananas Foster, plus many sugar-free selections.  Lunch seating on St. Patrick’s Day begins at 11am and is $15.99, while dinner seating begins at 4pm and is $24.99.

Three of the resort’s seven restaurants will offer dining specials on Wednesday, February 14th.

At The Bistro, the chefs will prepare beautifully crafted specials for you to savor and indulge. Begin your meal with a mouth-watering and sexy sushi roll of tempura shrimp, avocado on the inside, tobiko on the outside, passion fruit-mango salsa, eel sauce, wasabi and ginger for $15. Savor an appetizing entrée of Chateaubriand surf n’ turf featuring a center cut filet mignon, roasted and sliced alongside broiled Maine lobster tail, grilled baby vegetables, parmesan crushed potatoes, bourbon demi glace and sauce béarnaise for $65 per person. The Cabazon Band of Mission Indians’ Fantasy Springs Resort Casino is proud to announce they have entered into another three-year partnership with the Riverside County Economic Development Agency.  The partnership continues Fantasy Springs’ and The Tribe’s support of the annual Riverside County Fair & National Date Festival, ensuring at least 22 years of uninterrupted sponsorship of the yearly event through 2020.

Fantasy Springs’ continuing partnership with The Riverside County Fair & National Date Festival is made possible by The Cabazon Band of Mission Indians, who believe in the importance of community involvement. Being vibrant members of the Coachella Valley and Riverside County communities, they want to give back by supporting various endeavors throughout the year.
